Ingredients for the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (makes 850ml, enough for 10)

150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Method

Making the Cordial: Place every ingredients inside a pan, bring to a gentle boil, stirring so the sugar melts. Next, turn off the burner and leave to cool completely. Pour into a clean bottle, seal and store chilled, it will last for around one month.

To make Cocktail Base: Combine every liquid ingredients in a sizeable container, allow it to infuse for one hour, then pass it through preferably using a fine cloth, so it's completely strained.

When ready to serve: Pour 85ml from the cocktail base to a stirring glass containing ice, and stir lightly for about 60 seconds until cold. Strain into a chilled martini glass or equivalent, decorate with the cranberries and finish with a light spray with the mandarin essence above the glass.
